Single-origin gochujang, made from Korean heirloom chilies and aged in antique onggi, sells for ten times the supermarket version.

Beyond the Hype: What’s Next?

The Korean food culture heritage designation for traditional jang-making has brought welcome attention, but also pressure. Young Koreans increasingly see artisanal food production as a viable career, not just something grandparents did. That’s revolutionary in a culture that pushed everyone toward office jobs for decades.

Small-batch jang makers are experimenting too. I’ve tasted doenjang aged in whiskey barrels, gochujang made with heirloom chili varieties nearly extinct, and fusion jangs incorporating non-traditional ingredients like miso or koji.

Some purists hate this. Others argue that jang has always evolved—remember, gochujang itself was an innovation once.

What I find fascinating is how Korean fermented foods are influencing global cuisine without becoming fusion in the bad sense.
